  • Any Two Entrée Choices From the Selected Menu
  • Any One Choice From the Salad Menu
  • Any Two Choices From the Vegetable & Starch Menu
  • Assorted Breads with Butter
  • Freshly Brewed Iced Tea and Coffee
  • China-like Plates, Flatware, Linen Like Napkins, and Cups available for additional $4 per person, otherwise basic Black plates, Utensils, Napkins will be provided.

  • Chafing Dishes, Serving Platters, Serving Bowls and Utensils for Buffet
  • Chef and Staff onsite for 5 hours for event
  • Hors D’oeuvres (stationary Display) with 2 selections, Additional Hors D’oeuvres may be added for additional cost. Passed Hors D’oeuvres available also, for additional charge.

  • Lemon Chicken: served in a caper and dill butter sauce
  • Italian Style Sausage & Peppers: locally sauced freshly made sausage with caramelized sweet onions & peppers, baked in our own Marinara Sauce, served with Parmesan on the side
  • Chicken Almondine: boneless chicken breast topped with toasted almonds in a sour cream & tarragon Sauce

  • Slow Roasted Tropical Pork: Center Cut Loin of Pork crusted with Island Spices, sliced thin & topped with a savory sauce infused with bananas, caramelized onions, & raisins
  • Coastal Chicken: marinated boneless chicken breast topped with plum tomato, peppers, roasted corn, and black bean salsa
  • Local Baked Fish: fresh, locally sourced fish baked and topped with a Cream Sauce or Blackened and served with a Creole Sauce
  • Citrus B.B.Q. Chicken: boneless breast and thighs, slowly simmered in a Housemade citrus BBQ sauce (add local datil peppers for a slightly spicier sauce)

  • Chef Carved Herb Crusted Prime Rib Roast (Add $1.50 per person): rubbed with Worcestershire, Olive Oil and Herbs roasted at low temperature for hours, served with a Horseradish Cream Sauce and Au Jus
  • Beef Bourguignon: A Classic Family recipe with Chunks of Sirloin, Onions and Mushrooms with a rich Burgundy Sauce with Bleu Cheese Crumbles on the side
  • Grilled Salmon Steaks: with a Lemon Dill Sauce, Grilled to perfection with a light Lemon Sauce and Fresh Dill Weed
  • Seafood Pasta Primavera: Penne Pasta tossed with Grilled Spring Vegetables, Shrimp, Crab and Scallops, with Grated Parmesan Cheese and Herbs
